One of the most magical experiences of my life was eating at Erin Frenchs Lost Kitchen a magnificent restaurant-in-a-mill in Freedom Maine. Dads meatloaf with parsnip puree. Gently mix with hands and then add to loaf pan.
The food was deeply personal local and delicious. Set aside for 15 minutes to allow the oats to soak in the milk. Combine all of the meatloaf ingredients in a large bowl and use your hands to mix the until just evenly combined.
In a medium bowl stir together all of the ingredients. Brush the top of the meatloaf with a thick coat of the glaze. In a large mixing bowl add ground beef finely minced onion eggs bread crumbs Worcestershire sauce pepper seasoning salt garlic powder and ½ cup of ketchup.
Mix remaining ¼ cup of ketchup with brown sugar and mustard. Add this to the top of your meatloaf. Preheat oven to 350F rack in the middle.
Fill a 9 by 5 inch loaf pan with the meatloaf mixture patting it down to fit evenly. In a large bowl add the oats and milk and gently mix. After 15 minutes strain.
